Avocado corn salad: A perfect BBQ side

One of the biggest challenges in putting together a grill or barbecue menu can be coming up with an appropriate side that isn’t completely mundane or boring. And sure, you can dress up potato salad or mac ‘n cheese in interesting ways, but those dishes also bring the dreaded carb bomb to the table. Sometimes, a menu just needs something lighter, especially if your guests are more health conscious. Enter this corn salad dish.

The primary ingredients include corn, avocados, tomatoes, and onion. Cilantro adds that fresh herb flavor, while lime juice will add acid … and keep things looking and tasting fresh too.

Fresh and light and incorporating produce that people often really like, it’s also super simple to put together. After a little bit of prep, just throw your ingredients in a big bowl and mix.

Avocado and Corn Salad

3-4 cups corn kernels (grilled or steamed, and cooled)

2 pints cherry tomatoes, halved

2-3 avocados, chopped

1 large onion, diced

3-4 T cilantro, chopped finely

2 T lime juice

2 T olive oil

1 tsp lime zest (optional)

Salt and pepper to taste

 

Combine all ingredients in large bowl, and toss lightly. Chill until ready to serve.
